While I was out in the garden I picked more zucchini and squash. This has been odd too. Usually by this time I've already planted more zucchini and squash plants because the originals are finished producing but with this odd weather we've had, our original plants are beginning to produce again and look extremely healthy. It's actually kind of amazing, so now I'm looking for freezer recipes for which I can use my summer squashes. I've found a Zucchini Pizza Casserole Recipe that sounds like it would stand up to being frozen. In fact the recipe, itself, even gives a freeze option. Check it out on the Taste of Home site. There's also a nice looking Zucchini Cobbler Recipe on there I might try just for giggles. I like zucchini but I'm just like everyone else - enough is enough!!
I'm going to make some Elderberry Syrup for this Winter today. I want to get some canned up and stored for the harsh cold days as a preventative for colds and flu. This is NOT my Cold and Flu recipe. This is a nice syrup that can be drank for, as I said, prevention. It can also be mixed with soda water or ginger ale for a refreshing drink or mixed with a little water and heated for a cup of tea and hey, yes, it's good for you!!! Yea!!!! This recipe is also great for kids since there's no alcohol as a preservative in it. Elderberries have long been touted as an excellent antioxidant and some have even said useful for allergies. I'm going to can it in pints because I'm afraid if I use quarts some might go to waste. If anyone is interested in the recipe let me know and I will get it on my Recipes page.
