Last night I made Stuffed Green Peppers in an entirely different way than what I was brought up making. It probably wasn’t new for some people but for me it was. My Mother used to make stuffed peppers like a meatloaf stuffed in a pepper, which was okay, but I was just never too fond of them. I took a Better Crocker recipe and adapted it to my own tastes. The one ingredient that I was most interested in was Cumin. I’ve used cumin but never in my stuffed peppers and it made a very subtle difference in the taste which was quite pleasing to the palate. This recipe used ground beef, rice, garlic, and tomato sauce - and with my added twists it was great. It also had a cheese sauce drizzled over the top which didn’t hurt it any either. My husband, who will eat stuffed peppers but isn’t crazy about them, liked these, a lot!! The corn we had alongside was perfect!! The only thing I would have done differently, if serving to guests, is to have put the beautiful stuffed pepper in the middle of the plate and put a nice piece of bread on the side of the plate for dipping in some of the cheese sauce drizzled not only on the stuffed pepper but around it on the plate, and then add a very pretty sprig of parsley or chervil tucked alongside the pepper. I would put the salad or corn on another dish. It really was that pretty!! I made four, 2 green peppers and 2 red, so it truly was a feast for the eyes!! I will definitely make them again!!
This year when we plant our garden I will not plant so many sweet peppers. The reason I'm hunting down pepper recipes is because I have oodles and oodles of peppers in the freezer. I have them sliced, diced and whole. I've got them with little cute lids and without. I've got red, yellow, orange and green. I've got big ones and baby ones. I've just way too many sweet peppers!!!
