Tonight I’m going to bake Elderberry Muffins. I told you all awhile back that I’d come upon some recipes for Elderberries and tonight I’ll try this one for the first round. This particular recipe calls for dried elderberries and I just keep staring at the recipe thinking, hm-mm, maybe I should soak those berries first. These recipes that you find online and even in some recipe books, don’t always have all the exact steps. I’ve found that in a lot of recipes I use. It can become quite confusing and disturbing. Not only does one have to deal with their own lack of knowledge, one has to deal with an incorrect recipe with perhaps just a mistake or a wrong ingredient or lack thereof; but, it is such a waste of energy and can be quite costly depending upon the recipe!! This recipe is actually not going to be a big deal but still I do so hate to go to the effort just to have to throw it all out. The birds, I’m sure, would thank me but it would not make me very happy. I'm just going to attempt this with a positive attitude. I’m going to try it according to the recipe and if that doesn’t work, I’ll try something different tomorrow. Keep your fingers crossed!!

Wow!! Not bad, not bad at all! I'm going to put the recipe on the Recipe Page for you and you decide for yourself, but I don't think they're half bad. Now, admittedly, I haven't let them cool. I'm eating them warm so if they're good cold it will be more than I can stand. I greased and floured my muffin pans and left them in the oven 18 minutes instead of 20 and I should have taken them out even earlier. For my oven they only take about 16 minutes . . . so if you decide to try them, keep an eye on them until you know how the first batch turns out. I usually fill my muffin tins 2/3 full but realized that I still had a lot of batter left so I filled my tins almost full. The recipe said it made 12, so, trust me, it was only a guess, but it was a good guess. I'm pretty pleased. I would like to try these muffins sometime though when the berries are fresh just to see what they taste like then.
