I also made Amish Lemon Bars last night. There's something about these silly little lemon bars that completely satiate my appetite for sweets and as you all know, I rarely want something sweet. Chocolate is about the only thing that will satisfy me when I get a sweet craving but these little boogers not only satisfy my sweet tooth - I happen to be a lemon fanatic!! They were very good. I'm sure you all have the recipe but in case you don't I put it on my Recipes page. It takes very little effort to make these and - oh my!!!
I also like to make seasonal lists. I don't know about you but I cook differently in the Summer than I do in the Winter. We eat much lighter meals and since a lot of our vegetables are fresh from the garden sometimes there's very little cooking. I also grill a whole lot in the Summer. I've gotten into a lot of wraps for lunches. Tortilla shells are not really much better for you than bread but I find condiments like mayonnaise don't seem to be used so much and I find we eat more vegetable toppings instead of so much meat with these as well. I am also getting into lettuce wraps and I like that due to the fact that I'm backing off gluten. I like to have dips around too, not for chips, but for meats! I love dipping leftover chunks or pieces of pork, beef or chicken in mustard sauces and having a side of fruit or cheese. That's about all I need for lunch. Suppers are most difficult in the Summer for me. I've worked all day, hard, and I'm very, very tired so coming up with something to eat when I just can't go anymore is just the worst. Again, a grilled piece of meat, grilled squash, sliced tomatoes, etc. does the trick. That's also why I'm intending on making up some pizzas that are somewhat healthier and freezing them back - so I can just throw them in the oven.
