Hopefully, if the weather cooperates, my granddaughters will be here this week-end!! Oh my, I am giddy with excitement!!!

I'm putting a pork roast in the oven today and I'm fixing Egg Drop Soup. Egg Drop Soup is so easy to prepare. The only ingredient I'm lacking is fresh chives. I'll substitute with green onions but chives, for me, would be better! The pork roast will have a Pork Blend Rub to pump up the flavor. I considered preparing a Fruited Pork Roast but decided against it due to the fact that I'm making barbecue with whatever is left over. Also, I'm so tired of potatoes so I'm considering perhaps a Cheesy Chile Rice Casserole for a side dish. (See Recipes page) I've got to tell you. I miss my pears!! The squirrels cleaned me out last year and I didn't get any pears and this is one of those meals that pear sauce would have taken over the top. There's just something about pears and pork. I've got to do something about those little squirrely boogers this year! On top of that - have you ever looked for pear preserves? They're nearly impossible to find. You can - but don't go looking in your nearest grocery store. I also have only one jar of cinnamon pears left in my pantry for my granddaughters so I've just got to find a way to salvage the pears this year.
I've been trying to separate some of the recipes I've been printing out so that I know where to find them. Sometimes it feels like I've got billions and billions of recipes piling higher and higher. I admit-I'm a "Recipe PakRat" and it's so embarrassing! I have them in baskets, in books, under the bed and just about anywhere you might look. I tried the whole recipe box stuff online but I like to have it on paper just in case I can't get online. Then, of course, there are those recipes I've cut out and those that have been given to me and the list multiplies!! Anyway, I now have a folder for gluten free, one for current recipes to try and a folder for herbal recipes. Ha!! This is just a bare beginning!! But, it's a start.
