Today Hubby pulled the last of the onions that had any decent green tops and I froze back another 4 quart freezer bags. The rest will be left for large onions. We will probably try to dry most of them and maybe even chop up and dehydrate some. We'll see. I also picked a few more yellow squash and cucumbers and put them in the frig. Hubby dug a couple red potato plants so we'll be having buttered potatoes, broccoli with cheese sauce and salisbury steak for supper tonight. The potatoes, red and white, are looking fantastic!!
We also dug beets. I was sorely disappointed in my beets but it was certainly not their problem. The doggone rabbits or deer, I'm not sure which, got into the garden and ate them down to ground level. They gave it all they had and grew back to some extent. It looks like I have enough for 2 or 3 pints. This is fine. We don't eat a lot of beets but it is somewhat disappointing. I don't think I'm going to pickle these since I have some pickled beets leftover from last year so I'll just can up some with a little salt and water on them. The tops were too tough to eat but the chickens went crazy over them.

I ended up with 4 pints of beets and they are so beautiful. Sometimes when I look at my pantry I feel like I'm looking at shelves of jewels. The colors are simply sensational.
I went out and cut a bunch of applemint, made some applemint tea and am drying the rest. I don't think applemint is as good once it is dried but I like to mix it with other dried herbs for tea in the Winter. I also cut a few comfrey leaves to dry. Hopefully, in about a month I will have time to start making some of my medicinal-type recipes and comfrey salve is a must.
