Last night I put the bread in the freezer so it would be ready for this morning when I made my tea sandwiches. We're having egg salad tea sandwiches and cucumber tea sandwiches. The proper and most efficient way to fix tea sandwiches, if you're not waiting until the last minute to make them, is to freeze the bread, then get the loaves out and butter one side of each slice very thinly. This accomplishes one major biggy. It keeps the filling from making the bread mushy. After putting the filling on the bread just put them together nice and evenly. Take an electric knife and slice off the crusts and cut the sandwiches into the shapes desired for the sandwiches. Decorate your tea sandwiches with herbs, cover and slide into the fridge. I threw on some bee balm flowers instead of decorating each one of them and tucked in some basil. My sandwich tray was kind of pretty.
I made some homemade cheese crackers yesterday and they were pretty darn tasty. I also tried a new recipe for stuffing cherry tomatoes and it did not disappoint. I chunked up some cheese and dusted them with radish blossoms and prepared minted fruit salad. We had Applemint/Tarragon Tea and Lemon/Basil infused water to drink. (I'll put the cheese cracker recipe and the stuffed cherry tomato recipe on my Recipes page.) By the way, did you notice I dusted the cheese with radish blossoms? The blossoms are very tiny, white and lavender. They are very pretty, mild tasting and complement cheese. Oh, and lest I should forget-I put fresh flowers on the table. You gotta have fresh flowers on the table!! It was a very laid back affair, but we talked and laughed and I hoped they enjoyed themselves as much as I did. It was excellent to have them visit. I hope they come again soon.
