We did indeed have steaks for dinner yesterday and hubby did an excellent job grilling them. I put together some macaroni and cheese, then halved some cherry tomatoes, chopped up some chives poured a little Italian Dressing on top and held that in the frig until we were ready to eat. It was an easy but nice supper. After supper I sat down with the trusty nut cracker and opened a bunch of pecans I had saved from last year. When I was finished I had shells EVERYWHERE!!!! This is the first time we had ever gotten a decent crop from our trees and it was just plain cool. As an Indiana girl I have spent many a Fall collecting hickory nuts and black walnuts and then later in the Winter spent a good deal of time cracking them open with a hammer and picking out the nuts; but I'd never actually grown my own pecans, let alone crack and then use them. It was really cool. Does take a little muscle. I will say this - it's a lot easier shelling pecans than hickory nuts or walnuts!!
Today I'm going to try a Taste of Home Recipe for Spice Cupcakes with Mocha Frosting. I'm not big on cake, not big at all, but hubby drinks a lot of coffee and as you all know, he LOVES sweets. I figure these should be right up his alley. I don't bake many cakes from scratch. I'm way out of my comfort zone here so wish me luck. I'll let you know how they come out!! TeeHee!!! I'm also fixing up a double batch of Sloppy Joes. My friend is having some surgery on her eyes so I was trying to think what she might be able to use for a couple days. I know Sloppy Joes isn't your typical food to give someone but I don't know how she's going to be feeling. I figure she can throw it in the freezer (along with the buns), heat it up in the crockpot or nuke some of it. |
