Yesterday, Hubby was gone and this was my opportunity to try a new dish that I have been eyeing for awhile now. Creamy Confetti Corn with Bacon is a decadent side that will be a very savory and filling dish for your Thanksgiving and would pair well with not only chicken, but steak, ham or yes, even Turkey!!! Yay!!! No really, it's super good. I changed it up just a wee bit and I will put the recipe on my Recipes page. I fixed it as a main dish since I was indulging for the evening and it's a little too rich alone but as a side, it'll keep you coming back!!
As you all know, if you follow me, it's laundry day. I really have not been too very motivated today but I did at least get the laundry accomplished. I've been checking on Ms. Rhode Island Red every couple hours or so and if her nail doesn't get infected I think she'll be fine. She's not limping nearly as badly as this morning and I saw her jump up on her roost and that had to have hurt but she didn't act like it bothered her. So you know the drill - she's either healing or it's getting infected and she can't feel it right now. I'm hoping she's healing.
I just made a one-pan meal for supper tonight. I had about 1/4 pound of hamburger and I fried it up in some oil and turmeric. I then added about 7 ounces of sliced smoked sausage, 1/2 sliced onion, some sliced red peppers and I had boiled up 4 red potatoes earlier (with the skin on) so I peeled and cubed them and threw them in on top after everything had been sauteed for about 5 minutes and then added in about 1/4 cup water and let the potatoes warm up. Of course I added garlic salt, pepper, thyme and a little Parmesan on the side. Ooooh, it was better than I expected and I don't like smoked sausage. Yum!! This dish would be a fantastic campfire dish and the next time instead of hamburger I will use sausage. I only used hamburger because that's what was sitting in the frig leftover and I didn't have any sausage. It's simply good and hearty.
