I've been scouring the internet for information on lacto-fermenting. There are times when I almost have to laugh at myself. Here I've been making sauerkraut the old-fashioned way for years and never gave it any thought. Now I know that it is officially called lacto-fermentation!! Duh! What I have learned new though is that all the canning with vinegar, in such foods as dill pickles, salsa, etc. has replaced lacto-fermentation. Years ago people had this fermentation-art down pat because they had to know all the ways to preserve their foods. On top of that this type of preservation leaves your food healthy, alive and able to assist your gut in keeping you in tip-top shape. There's a lot of information out there and it is an amazing subject. It's simple, cheap and extremely healthy! I've been making my own mayonnaise and knew that I could put whey in it, let it sit out for about 7 hours, then refrigerate and it would extend its shelf life; but it never hit me that this was fermented mayonnaise and good for me, not only because I prepared it without all those nasty ingredients that you find on the label of the store-bought mayo, but because the whey I put in it for extending its life was a part of the actual fermentation process. Who knew!!? Now I find I can do this to pickles, relish, mustard, ketchup and my homemade salsas. Wow!!! I'm super excited! And whey? You know the watery stuff in yogurt? Yep! Whey!!! Now don't go off half cocked and start doing this. Read up on it a little. There are things you should keep in mind, like organic anything is better - you know, stuff like that, but after you read up on it - go ahead, do it!!! I'm sold!! I got home from work about 2 minutes after Hubby but before I left for work I pre-made a meat loaf, scrubbed the potatoes for baking and laid the frozen corn in the frig so they would be nearly thawed by the time I got home. It was a great supper and we were both really hungry. I've got some leftover meat loaf and some leftover ears of corn so the dog and the horses are going to LOVE me!!!
