I went out this morning and cut a whole bunch of Swiss Chard and a couple onions. Oooh, when I get that all sauteed up it's going to be delicious. I've got some leftover roast, potatoes and gravy from yesterday and I'll make some biscuits, put a jar of strawberry jam on the table and man oh man - that will taste so good!! Some days I wake up and can't think of a thing to cook but some days I'm ready to go!!
While I was out in the garden I picked my very first yellow squash. Two little tender ones. I'll just saute them right along with the Swiss Chard. I love it when the garden begins to produce goodies. It makes me feel so satisfied. Gardening can be back-breaking, sweaty work, no doubt, but this is the payoff! My cabbage and broccoli are starting to head and it won't be long and I'll be neck deep in canning and freezing. I'll probably be whining then but no matter what - I'm grateful. Not everyone has the property to raise a garden, the equipment, the health or the knowledge and I'm grateful for all of it.
Time to get off here and go get what few strawberries I have in my little garden. We didn't get many this year but just enough to keep hubby and I in shortcake. It won't be long and the red raspberries will be ready for picking. They are looking pretty good this year.
