I'm dehydrating leftover/junk tomatoes now. We are down to the yukky ones. The ones that got sun burnt, ones that were buggy. Yep, those tomatoes that are only a quarter or half good. I cut the bad off and dehydrate the good. Is there really a valid reason to throw them away when I can dehydrate the good parts and make dried tomato powder for paste? I don't think so!! Yes, I know it's a lot of work and may seem silly - but, I'm able, I find it useful and I'm willing, so why not? No, I don't have to. In fact, at this point in our lives, I don't have to do any of this but again, why not? I suppose I can say that over the years I've learned that living frugally is kind of an art. The possibilities are endless and I enjoy the adventure. I will continue to enjoy the adventure until I can't. It's as simple as that!
I got up early this morning and got the grape juice out of the refrigerator. The sediment had settled to the bottom so I dipped the juice off and strained it all into another pan. I then added as little sugar as possible, warmed it back up and put it into jars. I ended up with 5 quarts for the canner and 1 quart for the freezer. That freezer one is ours to drink as soon as we finish off what juice is already sitting in the refrigerator. Really now, 6 quarts is not too bad and it's awfully good too!! As you all have probably deduced I have a small kitchen. There are times I get stuff going and turn in circles trying to find a place to lay things. I have a basement but I'm not set up to can down there due to the lack of lighting, counter space and a sink. That's fine but there are times you would have to laugh if you visited our home. As my hubby said yesterday to one of my sons on the telephone. He came home and walked into what felt like a factory. He was right. I was moving on baby!! It was nearly like an assembly line! It rained here most of the night, which I was not adverse to, and has been drizzling rain all day. After all the rain we received earlier in the year, which nearly destroyed out garden, we waited forever to get a drink of water for our gardens here in Southwest Indiana. I think the rain might have come just in time for everyone's Fall gardens and perhaps I'll get a second batch of peppers, cucumbers, eggplant and thought I hate to say this out loud, probably more squash!!!
