I think I’ve just about decided to fix Chicken Soup tonight. It is probably the more healthier way to fix the leftover chicken. So far, my hubby and I have managed to NOT catch the flu this season or even a serious cold. Of course, I learned a long time ago to "Never Say Never"; so since it’s still fairly nasty out, this is not the time to let one’s guard down. I thought chicken soup with perhaps some Goji Berries and some Astragalus might be just the thing!!
I am so anticipating having some Goji Berries this summer! I would have had a bunch of them, I think, last year if the drought had not hit when it did. The blooms covered our 3 plants but there just was not enough moisture for them to set fruit. I could kick myself for not watering them but I had to cut costs somewhere! My only worry is, as I’ve been noting in my research, that there have been some people who get a certain type of Goji Berry that doesn’t fruit very well. Oh my, I don’t really even know what kind of Goji Berry I bought but if it doesn’t bear this year - we’ll know it wasn’t the drought and I’ll have to start over again. What a bummer - but for now I’m keepin’ my fingers crossed. Have any of you eaten Goji Berries? They are supposed to hold more antioxidant power than blueberries, but the jury's still out on that. I truly don't think they are as tasty as blueberries but they're not bad. You will find them in the stores as small dried red berries in small packages. That's because you can't afford "big" packages. I say that tongue-in-cheek but my goodness they are terrifically high priced. They are, though, oh so good for you!!!
I'm thawing out some sausage overnight because I'm making homemade pizza for us for tomorrow evening's meal. I'll be spending the whole day either taking wallpaper off the staircase walls or planting seeds. That's all I have planned and it will be such a fun day but that won't leave a lot of time for cooking so I think pizza will do the trick!!
