I fixed Chicken Broccoli Lasagna using a Taste of Home recipe last night and we also had it as leftovers for lunch today. Personally, I think it tasted great but . . . it was definitely not a quickie put-together. It wasn't super terrible, but I laugh at how many pots and pans I used. Of course, I wouldn't be happy unless I used as many ingredients as I could that I had grown and canned myself, and that probably added to some of the mess. I grated from blocks of cheese instead of buying shredded, I used my own canned chicken, cleaned and grated my own fresh carrots, used frozen chopped onions from my garden, my frozen chopped broccoli, used my own garlic cloves, parsley and chicken broth. But still, it was kind of spread out EVERYWHERE! You need to make a white creamy sauce first, then put together the body of it mixing the chicken, broccoli, etc., and of course, you have to boil up your lasagna. It just created quite the mess. But I did it and it was something I'd not fixed before!!! and it WAS good!! (Recipe on Recipes page.) I was out the door to go check on my chickens pronto this morning, all the time trying to build up the mental strength to see what I would have to see if something managed to get into the chicken coop last night. Luckily there were 8 healthy happy chickens clucking away. I've been keeping my eye out for any critters outside today. No sign of anything so far.

I glanced out the window this morning and this strange looking animal was swimming across our lake. At first I thought it was a muskrat but then it got out of the water and was playing around under our shelter house like a little kid. I kept looking at it thinking about how much it looked like the ferret my youngest son used to have as a pet. It was really kind of pretty and a very dark brown with a gorgeous tail. My binoculars were sitting right by the window but my camera was in the living room. The animal then walked across the lake on some of the ice that was still left frozen and then started toward the herb garden. I ran for my camera and went to the back bedroom to see if I could get a pic of him but that booger was a really fast little guy!! I don't know exactly where he went but my guess would be right next door to my neighbor who has a lake as well. Meanwhile, I went and googled ferret first and no, not a ferret. Then I googled a weasel and it told me that a mink was in the weasel family and so I googled mink and the picture was a spitting image of what I saw running around our property. I've got to tell you though the mink was really cool looking, but they are vicious chicken predators so I want to keep a close eye out. I sure don't want him to stick around. Tonight I'm trying a new recipe for Chicken, Broccoli and Cheese Lasagna. The smells from the kitchen are making me salivate. I hope it's good because it has quite a few ingredients in it and I would hate to have wasted all the cheese and chicken. I'll let you know how it turned out.
Hello! Today I'm heading out of here to visit my girlfriends. One of them has a birthday today and we thought we'd get together, have a sandwich, some cake and some good old gab!! We try to get together every year and celebrate our birthdays by going out to dinner to celebrate all of our birthdays at one time, but this year we're trying something a little different. I've made some egg salad sandwiches and am going to take a couple quarts of homemade vegetable soup and one of the other gals is getting a cake. It should be fun. The Winter has gotten us all a little down so this will be a nice pick-me-up!
Hubby, meanwhile, gets leftovers for lunch but he likes egg salad and crackers so he's not complaining. He's busy about getting all our tax information together and as you all know, that's exciting - NOT!!! I left the house at 10:15 this morning and was on the road back home at 5:30 p.m. Yep, a whole day sitting and talking with friends. We had wonderful conversations about absolutely everything under the sun and did a whole lot of laughing. Oh yes, some complaining and griping got in there - just a little - but mostly it was a day of sharing our hearts. Hope you have someone to share your heart with too!!! Brutal, brutal, brutal! The wind was out of the North this morning and cut through my clothes like a knife. Boy, it was cold! The severe change in the weather had the horses dancing, prancing and bucking. You can always tell when there is going to be a significant weather change because the horses play, run and kick up their heels. It's actually a very cool thing to see. Missi has a bum foot and doesn't kick quite as high as she used to and the frozen ground hurts her foot as well, but even she tried to give it a go this morning. Power, well, I watched him like a hawk when I went out to feed because he can be careless and I didn't want a face full of hoof. Happily, everyone is fed and watered and I'm back in my warm house.
I'm now looking at what I intend to have for supper. I've two meals I'm checking out that sound good to me. One is deep-fried fish and sweet potato fries and the other is chicken, broccoli and cheese lasagna. I think we'll have fish tonight and the chicken, broccoli and cheese lasagna tomorrow. I am going to have to sort of watch what I eat for a few days after that because, lucky me, gets a colonoscopy next week. I am NOT excited . . . but you gotta do what you gotta do. Then 5 days later I turn another year older. Not the best week in the world but it all beats the alternative!! Nah, actually I feel really good and that's not something to take for granted. I certainly appreciate the gift of good health and have no intention of wasting it whining about being "old". The really odd thing though about getting older, at least for me, is that I don't feel as old as everybody knows I am. I often wonder if they look at me the way I used to look at my grandparents. Oh my, that would be depressing. On the other hand, I used to look at my own parents after I became an adult and not ever think of them as getting or being older. They were a very "young" old. Don't get me wrong - it all happens sooner or later. Dad died during an operation and Mom developed Alzheimer disease but up until that you would have thought they were right around 50 forever!! Mom and Dad just sort of never got old in my head. They got old but never that "old" that I associate with grandparents. Strange how the mind works, huh? I wonder what my sons and my granddaughters will say about me when I'm gone . . . hmmmm! |
