Then I went out and cut more eggplant. I've got a large baking sheet full of eggplant that I will roast and then freeze. Oh my gosh, the stuff is just wonderful!! I use it for Tomato, Mozzarella and Eggplant Dip and you can also just take the eggplant, add some spices, salt and olive oil for a light dip and trust me, you'll be happy with that indeed!! I don't know how I ever did without eggplant.
Next I tripped out to the herb garden to check on my figs one more time. Yep, still there . . . still green!!
I then made up a batch of Ranch Dressing Blend and some Pork Blend since I was completely out.
Last night I sliced the red peppers up and got 2 quarts in the freezer. I'm getting quite a stash for this Winter. I'm trying my very best to get everything in order before I leave tomorrow but I'm sure I'll forget something.
I scrambled up eggs, fried sausage, sliced some tomatoes and fixed a few pieces of toast with red raspberry jelly for lunch today. I couldn't find a thing in the house to eat and I always know that Hubby will eat a breakfast, at breakfast, lunch or supper. He's a big breakfast guy.
