We decided to only do a half bushel this year. We ended up with 7 quarts and 2 pints of applesauce, 2 quarts of apple juice/water and 6 apples for fresh eating. We should probably have done more but this will see us through the Winter along with our other fruits.
My brain is slowly but surely letting the canning season go. To can as much as I do you almost have to stay at full throttle for the summer but as the summer wears on and I know my pantry is beginning to bulge I begin to lose some of the drive to can. I plan on canning some meat, and perhaps can some mustard in my spare time, along with persimmon butter and fig jam; but for the most part I think I'm nearly finished. If we get a lot of small potatoes I will probably can those as well but, that's it. It's not been a bad year - not a good year, mind you - but not bad. When you look around the world and see the horrible things that are happening and all the people that are starving . . . well . . . I take it back . . . it's been a pretty good year and I'm very, very thankful.
