Today is not really going to be a very interesting day but one must do what one must do. I'm going to can applesauce tomorrow so all the quart jars needed to be brought upstairs and washed. I went ahead and brought up all the equipment to get it accomplished too.
I'm also doing the laundry early due to this being a rather busy week. I want to spend Friday and Saturday working on getting the herb program finalized. The vinegars are ready to go - I always have flavored vinegars, but I needed to make some flavorbombs and get them in the freezer too. That's finished. I will then work on the flavored finishing salts and oils this week-end and get the salad dressings made up and refrigerated. Then on Monday I'll make the salads and go over the program one more time.

I've been told by numerous people that their basil has produced wonderfully this year, as has mine. Here's a little tip and a teaser for my herb program. Why not make basil salt? Put a layer of salt in the bottom of a glass jar and put whole basil leaves on top and then a layer of salt, then basil, and so on until the jar is full. The basil will lend its wonderful essential oils to the salt making it deliriously aromatic and at the same time will be preserving your basil for sometime this Winter when you get all bent out of shape because you're completely out of basil!!!
