Speaking of today!! It's tomato canning day!! Oh, and before I get started, here's a disappointing update. You know that beautiful wall of Partridge Head Butterbeans? I don't understand it but we're not going to get hardly any butterbeans off the plants. We've beautiful green vines but they are all leaf and hardly any bean. Now that's heartbreaking but sometimes that's just the way it goes. We once had a year like that with the potatoes. We had some of the most prolific and gorgeous potato plants you ever saw and that year we dug and nearly collapsed in disappointment at the quantity of potatoes. I'll bet we didn't get 10 pounds of potatoes that year. I don't know whether seed is our problem this year, soil, or what - but we'll try again next year!!
The next biggy on my list is preserving pumpkin puree. I'll probably freeze pumpkin but I might can some chunks. From what I'm hearing you're not supposed to can pumpkin puree anymore. Supposedly, the puree is thick enough it will not allow the heat to penetrate all the way through so you're supposed to can pumpkin in cubes with some liquid to finish filling the jars. I may try both. Who knows!! I'll also keep a few pumpkins along with the butternut squash sitting in the basement. Both Winter over really well just as is. If I am running low on jars I always do this but I'm doing okay this year.
