This morning I'm setting some pinto beans to soaking. I put a big bag in because I'm going to make pinto beans and cornbread later this week but I am also going to take 4 cups of them and make Homemade Refried Beans. I'm in the mood for burritos. I have the ground beef and taco seasoning, onions, shredded lettuce, sour cream and cheddar cheese but no refried beans or tomatoes. I think I'll get a quart of whole tomatoes out and drain them real good and then chop up a couple tomatoes. That will be almost as good as fresh tomatoes, not quite, but it will keep me from having to go to the store. So that's tomorrow's dinner. I'll be gone tonight so the guys are on their own.
Refried bean are just so good and so good for you. The secret is to NEVER forget "cumin"! I've made that mistake and you would be amazed at how it changes the flavor. I'll put the recipe I use on my Recipes Page for you. Way too easy!! Just thinking about the bean dip, the ground beef, and homemade tortillas I'm drooling already. Speaking of tortillas - try your hand making your own. Don't be dismayed the first couple times you make them and they aren't just perfectly round. That takes a little time but I find with cooking it's not just a matter of reading and knowing a recipe, it's also a matter of technique and technique can only be developed by practice. Our grandparent's didn't know they had a technique, they just had to feed their families and obviously, their technique was just another word for survival!
