I'm up way too early this morning but I just couldn't sleep so guess what I got to see - the moon again!!! My goodness, it is beautiful! The sun is slowly but surely sending the moon on its way and bringing a brand new day.
Hubby has to go to work today at 1:00 p.m. so I am going to fix us an early lunch. I've been craving pasta so I went out and got some cherry and pear tomatoes and 2 tiny jalapenos from the garden, picked some basil from the herb garden, and went to the basement where I had garlic drying and got a bulb. I came upstairs and put the tomatoes in a bowl, cut my basil chiffonade style, chopped up some cloves of garlic and the jalapenos really fine and added those to the bowl, added salt and pepper, doused it with olive oil and set it aside for awhile. Then I put the water onto boil for the angel hair pasta. After the pasta was cooked Al Dente and after I transferred the tomato mixture into a heat resistant bowl, I added the pasta to the dish along with some Parmesan cheese. I tossed it altogether, plated it and added some Parmesan on top with a sprig of basil. YUM!!! Now folks, I have to say the lunch was totally awesome although Hubby, as usual, was wondering, "Where's the meat?" I may use part of this dish for my herb club program. Do you know how wonderful the tomato mixture would be over a bowl of gorgeous greens with a little squeeze of lemon. Oh my gosh!!!!!
