I was going to can tomatoes today and I could probably get another canner but opted to hold off and pick tomorrow evening and can Monday all day. By that time I should be able to get a couple canners of tomato sauce.
I spent a good deal of time downstairs in my herb kitchen last night trying to find room for all my canned goods. I'd like to have them all in one spot where it's well protected and cool, in case of any emergency. I also spent a good deal of my time yesterday freezing eggs. I decided to freeze them already scrambled but without milk. I froze them in quantities of 2 eggs and 3 eggs, in little baggies. I put about 6 packages of each in a container and made sure they were all marked. Now I'm ready for making cakes and brownies, etc. this Winter. I also put 4 in a container for Hubby and me to have scrambled eggs and one that contained 8 in case I needed some for company. I know I sound so silly but I think this is so exciting. During the holiday seasons I buy dozens of eggs and I do mean dozens for baking and making casseroles and the like. This will be a major savings for me. The chickens I bought are chickens that often lay right through the Winter but I'm not taking any chances. I had 3-1/2 dozen eggs in the frig yesterday and just decided to go ahead and freeze them while I had too many to use. I've given away lots of eggs so far and decided "time to preserve". I am also looking forward to making pickled eggs sometime here in the future. I've never made those before. I don't even know what they taste like but I think it's high time I found out!!
Tonight Hubby and I are visiting some friends and are having dinner out. I'm more than ready to get out of the garden, ready to talk, laugh and share pleasant conversation with old friends.
I went out today and took some pics of our chickens and tried to get one of our 2 baby Purple Martins.
