I had to work at the office today and things didn’t go too badly. It was a long day and I had a little spare time on my lunch hour and googled recipes for yellow squash. They are coming on pretty strong right now. Most of what’s out there I’ve tried. I love it steamed but it gets old fast and fried is good but fattening. I’ve grilled it, eaten it fresh with dips, used it in soups and stews and in cheesy casseroles and souffles as well. I did google an interesting recipe for Yellow Summer Squash and Corn Soup that I will definitely try. Looks pretty tasty to me. Let’s face it, squash is just one of those veggies that when it’s in season, it’s in season, and then it’s gone. I also looked up cucumber recipes. I’ve never cooked cucumbers and they say that in other countries they cook them all the time. I may have to try that one of these days. My granddaughter comes for a visit this week-end and she loves granny’s cucumber sandwiches so guess what we’re having? My sister gave me a recipe for a cucumber dip that I’m going to try as well. Cucumbers are another one of those vegetables that when it’s in season, it’s in season, and then it’s gone too! Zucchini is not so much a problem, at least not for me. If I get too many I just shred ‘em and freeze ‘em. I’ve never gotten tired of using my frozen shredded zucchini for homemade zucchini bread, EVER.
I have 2 cases of peaches sitting downstairs haunting me. Tomorrow I’m canning those babies and am considering making peach preserves. Let me tell you, I’ll definitely be busy tomorrow!! Tonight I’ll be washing canning jars and rings, doing the laundry early and just getting ready for a busy day off from the law office.
