This is not going to go well. I can tell already!! I don't want to throw anything away!!!

Well, I'm finished. I didn't throw nearly as much away as I probably should have but I just couldn't. It is at least straightened up and some of it went out the door but I'll admit, not enough. Maybe next time. You see, if this had been 10 or 15 years ago I would have pitched a lot of it, but my thinking has changed a great deal on what's important and what's not, and these days seem to be so uncertain I'm almost afraid to throw stuff mindlessly away. Afraid isn't exactly the right word but I realize what I could actually do with what I used to feel was disposable and it makes me rethink what I call trash. For instance, long-stem glasses make beautiful Christmas decorations with a tea light inside and some greenery placed around them. But do I save 3 glasses? Three tall water glasses and 3 juice glasses would be perfect for 2 older people like us if you don't have any others in your home. See what I'm saying - but you can't keep everything or you become a pack rat and what actually ends up happening is no one gets any use out of anything!!!

I couldn't leave well enough alone!! I suppose it was too much time on my hands. At least that's what I'm going to blame it on. I just had to can something else!!! The long and the short of it is, I canned 7 pints of Corn and Black Bean Salsa. Oh my, the salsa is exceptionally flavorful, spicy and will be perfect for munching on this Winter. I'm really excited about my food stocks for this Winter. They are well-rounded and will be such a savings on the grocery bill. We're big eaters plus this allows me to afford some of those foods I can't grow myself and are nothing but an indulgence. So, I'm happy, happy, happy!!
