Meanwhile, I cut some Swiss Chard. Later this week I'm going to make some Cheesy Spinach Dip only I'll use the Swiss Chard instead. The stuff is just so-o-o good!! Then I went around checking on the squash. Everything looked pretty good and I was happy they weren't too big, so I wouldn't have to pick any, because you still sink when you step into the garden . . . then I spied a zucchini that was already getting too big and when you see one they all seem to start popping out at you. I very carefully stepped into the garden and picked the zucchini and then went one step too far for the 3 squash that were getting huge . . . and sank. I got them but oh, I hate that it was too wet to be out there. You kind of figure every step you make compacts the ground when it eventually dries up and that's really not good for the garden. I only had one big sink hole which is one too many - so I eased out of the garden and I'll just have to leave the rest of the squash where it's at.
I woke up at about 6:00 a.m. this morning so I went ahead, got up, made coffee and put the stevia extract on the stovetop and simmered on low for 20 minutes, then poured it into jars. Just that easy folks and it's a whole lot better for you than those drops of liquid sweetener that has who-knows-what in it. This is something you could put in a small dropper bottle and carry with you in your purse or bag for when you travel. Try making your own sometime. It's rather empowering. Funny how the little things you do mean so much!! I spray natural bug sprays on myself when I go out to pick raspberries nowadays but have, in the past, also used the not-so-natural stuff for mosquitoes and other biting creatures. This year the bugs are absolutely eating me alive, especially when I go to the raspberry patch. I almost dread going out to pick! This morning it looks as though I will wait until this evening or maybe even tomorrow morning to pick the red raspberries, which certainly doesn't hurt my feelings any. This time when I go out I'm wearing my bug baffle. I've had it with the bug bites. At this point, I'm trying to decide whether to freeze the red raspberries or dehydrate them for teas. We'll see. Tonight I'm taking salmon and topping it with squash and zucchini, slices of lemon, a little hot sauce, some lemon thyme, butter, salt and pepper and wrapping it in foil packages and slipping them in the oven. I will serve that with Country Wild Rice. Yum!!

Yes I like the squash when it is smaller too. So tender and sweet. Had some the other night out of our garden and it was soooo good! Also, a friend of ours gave us some patty squash and I cooked them up last night. It is different, not sure I like it as well as our normal squash. it seemed a little bit bitter, but I fried it in olive oil, chives, scallions and garlic. pretty tasty.
