I'm in the process of making chutney as I type this blog. I tried to use all the cucumbers but man, I just couldn't do it. I ended up throwing 10 cucumbers away. I probably used 10 in the recipe as well. I've got a few pics of the process of making chutney. I honestly do not have a recipe. I just sort of throw it in there, taste until it's just about right and then cook it down to the consistency it should be. In this area I'm not a very good cooking instructor. There are just some things though that take the fun out of cooking. Every once in a great while one needs to make a mistake that turns out perfectly even if you can't duplicate it again. It becomes one of those "remember when" memories!! Chutney is sort of that for me. I never know exactly how it's going to turn out. It's generally always good but always a surprise.

The Chutney is delicious and the last 6 pint jars of salsa are in the canner right now. I tried a new salsa recipe and it is an absolute "keeper". I'll put the recipe on my Recipes page. I know I've never made any better and honestly, I'm not too sure I've ever bought any better either. Hey, it's not my recipe so I can brag!! It didn't make quite as much salsa as the recipe said it would but it is some of the finest I've ever had. I used my food processor for all of it other than, of course, peeling the tomatoes and getting the seeds out of the green peppers and jalapeno peppers which almost choked me to death!! It calls for tomato sauce and I used some of my own and calls for 5 garlic cloves, peeled and minced as optional, which I did not add because it also calls for garlic powder. It's just perfect . . . for me, that is. Everybody's different!!!
I still have a boatload of tomatoes sitting outside so I figure I'll can whole tomatoes tonight as well. Hubby is bringing home a pizza for supper and I'm just going to can, can, can. You all have a wonderful Sunday and I'll be talking to you again come Monday.
