I've already prepared a meatloaf for supper and I think I'm going to fix a Cheesy Squash Casserole and fresh green beans. I can't wait to eat this meal. These are such comfort foods and make all the garden work worth it!!
This morning I was up bright and early and was in the garden picking green beans. I really don't mind picking beans as long as the sun isn't out and beating down on me. Yes, it hurts my back after awhile but that's just the way it goes. You gotta accept it and move on. You can't pick beans unless you bend over and that's that! I also cut off a couple of the small, sweeter cabbage heads. I picked off the outer leaves, dropped them in garbage bag and put them in the basement frig for making cole slaw later. I also cut 3 more heads of broccoli and chopped, steamed and froze them. Later today, after I can the green beans I'm going to thin out the onions, chop them up and freeze them too. I did this last year. I had so many onions and we have never gotten the hang of drying them so I took a bunch and froze them in large baggies. All Winter long, everytime I needed onions, I would break off some onions and they were so useful because frankly, they were already chopped and all I had to do was throw them in. The only thing I'm doing differently this year is I'm freezing them in quart bags instead of gallon bags. I don't like opening a freezer bag so many times and contaminating the onions with air so the smaller bags will work a lot better. This was really one of the best things I did last year. It's such an easy way to do onions. I only bought onions from the store a few times this last Winter when only fresh onions would do. It's an extremely economical way to use your onions if you use a lot of them in your cooking, and I do!!

You may also consider the snack size bags. They are a great size!

Snack size bags is a great idea!! I'm just so used to keeping quart size I didn't even think about snack size. (of course I'll have to check and see if they come in freezer snack size)
