I came home tonight to a frig with no food in it. Well, almost no food anyway. I've got sausage, eggs, milk, cheese and butter. I think we're looking at breakfast for supper this evening. We both love breakfast at suppertime. My husband used to work swing shift so breakfast is always good for him and I just love bacon or sausage and eggs so it suits me!! I'm just trying to make up my mind whether I want to fix eggs over easy or scrambled. Scrambled could bring with it some amazing homemade hot sauce or I could have that wonderful oozing cheese melted over top. Oh yum, I think I'm going with the scrambled. Then I have to decide - biscuits or toast. Biscuits are a favorite of my husband but I like toast. This one will be tough! Hmmmm . . . how much of a mess do I really want to make? I also have some homemade Raspberry Jam and Fig Jam from last summer's crop so those will be pretty tasty on either one.
This is one of those times that I feel extremely incompetent blogging. There are just days, my dear friends, that are simply not interesting to write about. I sit and think, "Gosh, what did I do today that was even remotely interesting?" Nada, nothing, zilch!!! I worked, I cooked and I'm trying to get tomorrow's stuff done today because I've got a dentist appointment tomorrow to get my cap. Hopefully, I won't have to see the dentist again for another whole year. I can dream, can't I?! But anyway, there's just not a lot going on. I'm watering my tomatoes and some of my peppers are up - which tickles me to death because I wasn't too sure they would germinate. I don't have one of those warming mats and the seeds need to be warm to germinate. I had them in the same container as the tomatoes so when the tomatoes germinated and popped up I put them under the plant lights and then I set the pepper plants on top of the lights because they get really warm and ta-da!! I've got pepper plants!!
I've also been looking through all my cookbooks trying to come up with something just extraordinarily scrumptious for Easter Sunday breakfast. The church we have been attending has breakfast on Easter morning and I want to take something really great. Any of you out there have an exceptional recipe? I've got 3 egg casserole recipes and a blueberry French toast recipe and I've also been thinking about a hot fruit compote to take as well. I'm in the mood for something just awesomely superb! If you have a special recipe that makes others drool, share -- PLEASE!!!
