I made a lot of sauerkraut this past Summer. I made it for two reasons: One-my deep love of cooked sauerkraut and Two-eaten fresh it's a great probiotic food thereby such a nutritious food for gut health. It's absolutely one of the easiest things in the world to make. All you really need is a bunch of cabbage, salt, water, canning jars, rings and lids, a cool spot to store your jars (or room in the frig) and patience.
I then heard some noise outside, looked out the window and there were a bunch of men, vehicles and equipment in my driveway. They are going to be putting in our two new retainer walls today and tomorrow. I am so excited I can barely stand it. At the very same time one of our family Christmas presents was delivered and I got even more excited!! Oh my goodness!
So, the bottom line is - after I fix lunch and gorge myself I'm off to work until 10:30 tonight. This gal is going to be tired when I get back to the ranch but I'll certainly be counting my blessings.
