This evening I get to pick the first of the green beans!! I always pick the young ones and stir-fry them with olive oil and garlic and top them off with almond slices. These are what Hubby and I wait for every year!! Our favorite way to eat green beans!
FYI - before I quit typing and get back to work (since I'm cooled off finally!) I wanted you to know that the pork loin roast I fixed last night was absolutely mouth watering. It was so good I couldn't believe it and man oh man, easy too. Putting it in the crockpot with the herbs I chose and then putting it in the oven for a half hour on 450 with strawberry preserves thickly drizzled on top was just perfection. I've fixed many a stuffed pork loin and been successful with just about every one of them and even though this was not one of those fancy stuffed roasts, this was was so over-the-top easy, beautiful and delicious! Perfect for company and not difficult at all. Add some mashed potatoes and gravy or potatoes au gratin, some green beans and sliced tomatoes or steamed broccoli or squash and watch them groan! This Summer when you're elbow deep in canning and you think egads, company's coming, it's hot and what am I going to prepare for them to eat? Think about a pork loin roast fixed this way. Yes, it was an expensive piece of meat but I am going to get every penny out of it and trust me, you will too!!
