Last night I made Paula Deen's Cheesy Squash Casserole and it was pretty doggone good. I've put it on my Recipes page if you're interested. Hubby said he could eat squash like this anytime!! We talked about it and, though I have not canned squash in the past because if I did I wouldn't have had anyone to eat it, we decided that I could probably cube up the squash, can it and then use it in this particular casserole. I just wouldn't have to saute the squash. Sounds like a plan to me so I am officially piling up squash to can. Of course that doesn't take long. Give me 3 or 4 days and I'll have plenty. I'm not going to overdo it. I'm just going to can 7 quarts and if it doesn't work I haven't lost too much - but I think it will work perfectly.
It's been raining off and on all morning. It's not been a hard rain, just a nice easy rain. One of those you can work right through. In the interim hubby went and got some mulch for me to put around the roses and helped me spread it. While it rained I've weeded, picked red raspberries and just plain stood there and was grateful for the cooling rain on my face. The church we are attending is having a dinner after service tomorrow and hubby requested my Broccoli Casserole and Cheesecake. I guess I'd better get on the stick and get moving on the cheesecake. I tried that cheesy squash and added some zucinni and man it was the bomb!!!!! Loved it!!!
