Today I've decided to can beans. Last night I went downstairs into my supplies and pulled out 2 pounds of Great Northern Beans and 2 pounds of Pinto Beans. For the record, 2 pounds works up to be approximately 3 quarts. I don't know why but I thought it was going to make about double that . . . so if you would like to do this, now you know. Had I known for sure I would have soaked double that amount because I wanted to do 2 canners, not just one. It takes 1-1/2 hours at 11 pounds in the pressure canner. I've set to soak another batch thinking I'll can it up late tonight. I got out some more Pinto Beans and some Red Beans. Hopefully in the coming days I will be canning Cannellini Beans. They are a delicious white kidney bean that I use in bean dips, are extremely tasty and having them canned up and ready to go would be a boon for me.
While I was canning and soaking beans I decided to go ahead and make a big pot of vegetable soup. Yesterday I put a couple roasts in the crockpot and we had roast beef sandwiches last night for supper. Roast Beef is one of our most favorite sandwiches and we watched the debates and enjoyed our supper. All that being said I've got a lot of beef leftover. With all the vegetables coming from the garden now is the time to make up a big pot of soup, get it canned and set it back for the Wintertime. We'll long for hot soups once the weather turns chilly!
