Last night I went out and picked another 1/2 bushel of tomatoes. The Romas are coming on strong now and the other tomatoes are closing out. It's sad to see them slowly begin to stop producing . . . but I sure don't need any more! I want to take some to my friend and have enough to make the insalata caprese for herb club on Monday night then I'll do whatever I have to do with the rest of them. Tomorrow I'll make more tomato sauce from what I have already gathered and that will actually be all I need to get us through the Winter.
We're having the BLT's hubby has been begging for this evening for supper. This is the last BLT meal of the season. This is his third meal and all that bacon, mayo and salt just isn't healthy for either of us but geez, BLT's sure are good!!! By the way, I don't know if any of you are still frying your bacon or not, but in case you are - consider putting your bacon in the oven. It's simple, the bacon comes out flat and crisp, takes less than 20 minutes and there's no big greasy mess. I'll put the recipe on my Recipes Page for you. It's another Barefoot Contessa recipe that I just can't live without! I used to dread making BLT's but not anymore. It's a snap!! The nice thing is I can actually sit down with the family and eat with them. I used to stand at the stove and make the sandwiches as they came out of the pan. Now, it's just a matter of toasting the bread and slapping it altogether.
My hope is to get the majority of the tomatoes canned tomorrow, the laundry done and then this week-end I want to clean up the kitchen garden. That has gotten way out of control and I've barely been able to contain myself. I just keep saying "vegetable garden first" and trying to push it out of my mind; but oh, I'll be so glad when I've got it back in shape!! A lot of irises need to be lifted and divided plus I’ve decided to take the herbs I have in my kitchen garden, dig them up and put them in the herb garden. Originally, I planned on having all herbs in the garden off my kitchen but I wanted color and now I have a mix of this and that. I want to have a neater look to it so I’m moving the herbs out and trying something different. We’ll see how it turns out but the biggest change is that I’m going to mulch extra heavy. I usually don’t mulch heavy, if at all, because I like more natural and organic, especially if I’m going to eat the stuff. When I get busy with other work, like gardening, sometimes I have to let less important jobs go, and when you do that out here in the country the weeds keep on keepin’ on at a major pace and I can have a mess on my hands in no time!! I still won’t spray plants with anything but organic sprays but I’ve got to get some mulch down, that’s for sure!!! I want the front of my house to look nice but I still want nature to be at home here.
