Last night I didn't start on pizza sauce until later in the afternoon. I had picked a bucket of assorted tomatoes, a few green peppers, some onions, a couple jalapenos, brought up some garlic and got those babies altogether in a big pan and made an awesome sauce. Here's where my herbal blends really shine. I added my homemade Italian Seasoning, Garlic and Onion Blend and my Garlic Salt along with some olive oil, of course. I don't follow a recipe. I put it together until the flavors scream rich, thick, voluptuous flavor and then I cook it down. Every year it's a little different but, as you all know, each year the tomatoes and peppers taste differently too, depending on the weather; but for some reason this year I turned out some killer pizza sauce!! I find the only problem with making pizza sauce is you start with a large amount of vegetables, it all gets washed, cleaned, cut up and put into this huge pan and when it all cooks down you've got this tiny amount of pizza sauce. After all that babying you only get a few jars of sauce - but, still, it's pure goodness!!! Last night about 10:00 p.m. the day ended for me on a really positive note. The pizza sauce was successfully canned up. I ended the day with 5 pints. Yes, only 5, but I'm telling you, it's worth it's weight in gold!
I went to the local farm market yesterday and got another watermelon. For some reason I just can't seem to get enough watermelon this year and while I was there I picked up some grapes. They are sitting in the frig for working up tomorrow into juice.
Also, last night for supper we had spaghetti squash. Now, I've only had spaghetti squash one other time, about 20 years ago and didn't much care for it - but the truth all told, I didn't know how to fix it either. Hubby and I were so impressed with this "new" squash. Since our potato crop pretty much failed it's nice to know that we can supplement our diets with this squash. What's even better is that it's so good for you and really, really low in calories. Our youngest son kept saying, "Mom, you've just got to try it." While he was visiting us and helping us plant garden he managed to talk me into planting a few extra hills - so we have plenty, and now I'm exceptionally glad we planted what we did!!
