Yesterday after the sun went down I went out and picked almost a bushel of tomatoes and more cucumbers and a couple summer squash. I also got to pick a lot of my winter squash. The vines were brown and so it was time. I got several acorn squash, a couple butternut and one Turks Turban. There are still a couple butternut that were not ready but I am really pleased with the assortment of squash. I've been looking at recipes for winter squash. It looks to me like most recipes are interchangeable for all the winter squash - but what I'd like to do is sit down with a small plate of each and taste each one just to see if there is a difference. They say Butternut Squash is exceptional paired with pastas because of its creaminess and I would like to see if any of the rest of the squash tastes best cooked in a particular manner.
As for today, I had to work at the office and then after work had to stop by the grocery store and pick up some eggs and bread. Hubby is wanting one more meal of BLT's and I didn't have any lettuce so I picked some up as well. Speaking of lettuce. Looks like I have some peeping through in the garden. This is the lettuce I just planted. Looks like the arugula is up as well, and yes, I believe I see a zucchini plant pushing through, YES!!!!
When I got home hubby took me out to the barn and showed me the size chicken pen he was building for me and just how he was going to do it. I'm telling you folks, there are times when I just want to squeeze him. He tries so hard and always, always tries to do the very best at whatever he is doing. He is such a gem. I am so excited I can hardly stand it!! He's really going to make a great chicken coop. When he starts building I'll try to get some pics to let you see it. He is doing everything possible to make it varmint safe because, since we live so close to a wildlife area, we have to be on our toes when raising something like chickens. We have a LOT of owls, hawks, you name it and that doesn't count for the fox, racoons, coyotes and possible rats (oh gross!!). The only thing he can't keep out are mice and snakes. I'll just have to be on the lookout for them!!
I put a couple chicken leg and thigh quarters in the crockpot this morning and I shredded the chicken when I got home. I cut up some lettuce, onion and tomatoes and shredded some cheese. I then mixed some mayo and sour cream with some lemon juice, salt and pepper and basil and we had chicken burritos. They weren't too bad, for just throwing something together!!
Now I'm heading back to the garden to get more tomatoes. I'm beginning . . . just beginning . . . to get my fill of tomatoes. I've certainly had enough of them this year!!
