Anyway, so much for storms - I had to go to work and it was a really busy day. No more wild emotions for me – just the humdrum of earning a living, but I'm not complaining.
When I got home I went out into the herb garden and pinched back the basil. There was enough basil that it got me dreaming about insalata caprese. Oh my, just imagine will you . . . fresh leaves of basil, slices of ripe heritage tomatoes of assorted colors and textures and lots of mozzarella cheese and a really good olive oil and/or balsamic vinegar sprinkled ever-so sparingly over the entire dish with just the slightest hint of garlic salt. Crusty Italian Bread being dipped in the oozing oil and vinegar. Oooooh – come on tomatoes – GROW!!!!!!
Tonight we had fried ham sandwiches, chips and dip. Hubby had salsa and I had homemade guacamole. Hubby doesn't like guacamole and believe you me it doesn't hurt my feelings at all. I could eat a barrel of the stuff. It, no doubt, has tons of calories, but it tastes so good and is also good for you if you don't overdo (which I do and am very shamefaced). It was a rather light supper so dessert was in order – same ole – same ole. Strawberries. Yes, the last of the strawberries! Thank goodness. I don't like to whine about such bounty but – I've just had enough!!
I’m not really doing much tonight. I think I’m going to spend some time reading. My niece left a wonderful book here when she visited and I’m chomping at the bit to get at it!!
