I went out and picked more rosehips to dry for tea. They are washed and laying out to dry as I type this blog. The ones I cleaned a few weeks ago are in the freezer. Those, I can just throw in soups, etc. These rosehips I will probably use strictly for tea and will be strained before drinking so I don't actually have to put a whole lot of effort or time into them. Just wash and dry!!
As usual, Wednesday is laundry day and I'm pluggin' on. While I'm doing that I'm thawing some chicken out along with some chicken broth. I'm making White Chili tonight. I'm trying a recipe from Taste of Home that actually uses turkey and garbanzo beans. In my version I am substituting those two ingredients using chicken and cannellini beans (white kidney beans). It looks really good too. There are several recipes out there but I wanted a white chili that did not have so many fattening, cholesterol laden ingredients. I love that it uses so many herbs such as marjoram, savory, garlic and cumin. That has got to pump up the flavor!! My hope is that it is still tasty while not containing the sour cream and all those other yummy ingredients that I dare not mention for fear of a relapse; though mind you, I have nothing against them either!! I'm just trying my hand at using the sumptuous ingredients I already have so handy in my repertoire. I don't have over 100 different herbs sitting in my garden just for pretty, ya know? Everything doesn't have to have some sort of cream or cheese, or for that matter tons of salt in it, to be delicious. At least I hope!! I'll put the recipe on my Recipes Page.

Now I must say this when I boiled up my chicken I boiled the chicken in salted and peppered water but there is no additional salt added to this dish and it really does not need it.
I could sit down and eat a block of salt and never blink an eye and this did not require even one shake of my salt shaker. I am a very happy camper!!
Now for those of you who have had white chili before you may not like this recipe but I've only seen white chili - I've never even tasted it so I found this amazingly good. I ate a bowl without the cheese on top and a bowl with cheese and I liked it without just as much as with. This recipe is a keeper.
