I got up this morning and checked on the vegetable garden and then sat out in the herb garden for 20 minutes or so, drinking my coffee and listening to the birds. Gosh, it was beautiful! Then I got all my tomato and other plants and set
them outside so they could get some sun today. After that it was time to get ready for work.
After yesterday I realized how important it is to just have some foodstuffs laying around in the frig and cabinets for a quick, grab-and-eat meal. Believe it or not some of the stuff I had frozen and canned is already gone. It doesn’t take long when you’re working outside to run through pre-made foods. I still have some canned beef for sandwiches but gosh, I get tired of sandwiches. The lasagna and burritos are gone and so is all the soup, which is probably a good thing because who wants soup when it’s hot outside.
So today I’m going to pick up a couple packages of baloney, turkey and hotdogs from the store and freeze all of it except for maybe the baloney. That way I’ll know I have something stashed back. Let’s face it, prep is the name of the game, and that’s where I really do NOT shine. I’ve got to take the time to sit down and figure out some foods that I can make and freeze that are tasty and easy to fix and eat. I’ve also got to figure out some sides that are healthy too. I’m going to make a cheeseball and keep the ingredients in the frig to make a few of those, but I don’t want to eat too much cheese. Until my garden veggies come in I think I’ll buy some carrots, celery and cucumbers, and then make a dip with half sour cream/half yogurt and of course some herbs, etc. Perhaps we’ll eat this lightened version of dip. I’ve got plenty of pear sauce and apple sauce but that gets old fast. Cole slaw might be good too. Of course I could make up some jello or jello and fruit and pudding too. You know, I could grill up some chicken, put some in the freezer and use that to top a nice salad. That’s a pretty good idea, easy and fresh!! I need to make a list and hang it on my frig so I remember some of the easy stuff to just throw together, like sloppy joes and tuna fish salad, chicken salad in pita pockets, fried egg sandwiches, stuff like that. Sometimes I'm too tired and just forget!!! If any of you have some fast and easy ideas, lay it on me. I could really use the input here!!!
Went grocery shopping tonight and got home about 6:00 p.m. When I got home my husband helped me pack in the groceries, helped me put them up and then told me I needed to go out to my herb garden and see if he mowed my garden paths okay.
When I was out in the herb garden yesterday I had a hoe in one hand, turned and when I did my hoe handle busted my gazing ball. I was just sick!! Tonight, he and I walked out to the garden together and as we got closer . . . well, yes, he had bought me a brand new blue gazing ball.
