Today I had promised myself I would work in the herb garden but as luck would have it, the tomatoes are starting to come on and, as I've said on here before, I am surprised to be getting any so I can't just nonchalantly ignore them until I feel I have time for them. No way!!! I took an assessment of our garden and realized I had plenty of onions, jalapenos, and green peppers to make a rather large batch of tomato salsa and went for it!! It's a pretty tasty salsa too. It really wasn't from any particular recipe. I just added this and that until it tasted right. I did thicken it a little but in an unusual way. I had a quart of ground dried tomatoes and added some of them to the pot. Oh my, what a difference that made. I will definitely do that next time I make salsa again. Anyway, I ended up with 19 pints to put up for the Winter and a little bowl for a snack later. I'm well satisfied with the results. The next batch of tomatoes I will probably can whole. Whole tomatoes can be crushed for some recipes, blended for sauces, etc. They are an overall way to use tomatoes. Now if it looks like I'll have a bunch coming on I might make some spaghetti sauce too. There's just no end to all the ways our family uses and eats tomatoes!!
This morning I got a call from my brother who informed me that on the Southeast side of Indiana the rain and wind were very, very destructive. He said that everywhere you looked big trees were down. Three inches fell in a very short time made things even worse. He told us they were all out cleaning up and counting their blessings that it wasn't worse and that no life was lost! Whew!! Close one for my family. I was out in the barn feeding the horses and giving the chickens some fresh cold water. Even though I'm not exactly ecstatic about more rain - the walk back to the house was glorious!!! wet - but glorious!!
