I fixed ribs and sauerkraut, mashed potatoes and purple-hulled peas on Sunday and have been munching on them ever since. Hubby will eat this once but I could eat this particular meal every day. I LOVE ribs and sauerkraut!!! I've had lunch in heaven for 3 days and ate the last of it today. I'm planning on planting, and indeed already have sprouted, a lot of cabbage to grow and preserve. I only have 2 quarts of homemade sauerkraut left sitting in the frig from last year's harvest. It's so very easy to make sauerkraut and I will can up about half of this year's cabbage in kraut and freeze the rest for veggie soup or frying as a side dish. I'm not big on freezer slaw but lots of people use their cabbage that way as well. Why don't you consider growing a few heads of cabbage this year. Even if you don't have room in the freezer and are not into preserving your harvest, you can cut the heads of cabbage, wrap them in a bag, put them in your frig and they will last for weeks - weeks I tell you - weeks!!!

The lettuces in my hotbox are simply beautiful and while I was out running around like a "fat sprite", I cut some nettles and put them out on my drying racks too. There really weren't enough just yet to fix a pot for dinner so I decided to dry them for tea. As I've said on here before - you absolutely cannot beat nettles in the nutrition department so if you find a patch keep an eye on it and when the nettles are 6 inches high or more, trim those babies and use them as you wish but don't ignore this wonderful wild herb. If you decide to cut them back be sure though to wear leather gloves. They aren't calling stinging nettles for nothing!! After they dry or are cooked the sting is gone so not to worry.
I've been pushing all my canned goods on Hubby in order to empty my jars in preparation for the coming year's harvest. Tonight for supper he gets a beef roast with our frozen onions, canned carrots and canned potatoes, flavored with homemade herb salt. For dessert he gets Apple Pie with Crumb Topping. So, that leaves 1 quart of apple pie filling and 7 quarts of potatoes to go!!
I still have a lot canned up, especially green beans. There's no way we'll eat it all. As it pertains to green beans - Hubby has started giving me the "evil eye". LOL!!!! Go figure!
