Step 2 - I am adding 1-1/2 cups white wine vinegar and several sprigs of basil to the strawberries with white sugar. I'm adding 1-1/2 cups apple cider vinegar, 3/4 cup of balsamic vinegar and 1-1/2 Tbs. cracked black peppercorns to the strawberries and raw cane sugar. Stir it well because I find that some of the sugar is still on the bottom of the bowl and needs stirred in. I considered using white balsamic vinegar but decided on the dark, just because. Maybe next time I'll try the white balsamic because I would very much like to make a strawberry shrub with tarragon as the aromatic. I'm following a traditional recipe for the strawberries with white sugar and a specific recipe for the strawberries with raw cane sugar. I'm supposing the reason they used less sugar in the balsamic shrub was because they are using balsamic vinegar which is extra sweet, itself. I tasted it and it is definitely yummy!! After all the shrubs are complete I will be posting the recipes on my Recipes page but to be honest, the possibilities are endless! I've even thought how good jalapeno peppers would be with strawberries or raspberries and I can't wait for peach and watermelon season!!
See? So far there's nothing to it and this is the way shrubs were made all the way back to colonial days. Anyway, I'll let them sit for a week now, covered, on my counter and we'll go from there. Have a great day!
