Today I also decided to bake another pumpkin pie only with my girlfriend's pumpkins. I took one of the larger pumpkins, cleaned and cut it up, scraped out the seeds, brushed olive oil on all sides, put them on a pan and slid them into an oven at 350 degrees for 45 minutes to 1 hour. I pulled them out of the oven, pulled off the peeling/skin, chopped them up, put them in a food processor and yabba-dabba-do!! I went to the frig for the pie dough I had made a couple hours ago, rolled it out, put the pumpkin filling together and boy, that pie looked fantastic. I had plenty of pumpkin left and am going to make pumpkin cookies too. What a way to go . . .

I fixed bacon cheeseburgers for supper and opened a jar of pork and beans. I still can't believe it!! These are REALLY pork and beans!! Hubby is the consummate poo-poo guy around here and he tried the pork and beans and congratulated me. He said they might be a little sweeter but he was impressed. Oh man, I was impressed too. I honestly couldn't believe it. I canned mine without salt. So I opened the pint jar, dumped it in a pan, put a tiny bit of water in the jar, swirled it around and dumped it in the pan too. Tasted it and said, "Oh no!" Then realized I had canned the beans with no salt. As soon as I added the salt - it was like night and day. Oh I'm so proud I can't believe it. I'm going to can at least 8 more jars of pork and beans. No one should be without pork and beans. YES!!!! (Recipe is on my Recipes page)
