Last night I made some Taco Dip for Hubby. He had to work on Sunday which is very unusual and didn’t get home until 7:00 p.m. so he needed a snack and I was ready for him!! Then this morning going in at 7:00 a.m., I know he’s going to be totally exhausted tonight. He has really been working a lot of hours for a part-timer but where he works has lost some of its employees and he’s been asked to work more hours. We both are sort of raising our eyebrows because this kind of schedule does not leave him much time to do what he needs to do here at the place . . . but supposedly it shouldn’t last but maybe another month or so. Thank goodness he does love the work!!
I’ve got 4 small eggplant left in the garden and I’m trying to decide the best way to use them. I love them grilled but Eggplant Parmesan sounds tempting!! I might just end up freezing them because right now I’ve had my full.
Last night I picked 21 figs off the tree so I’m going to slice and dehydrate them tonight. Of course, there will only be about 18 because I’ve grown quite accustomed to consuming them fresh! Gobble-Gobble!!!
I also need to get my mortar and pestle out and grind down some white yarrow and put it up for the Winter too. So much to do!!
