I took leftover insalata caprese and my southwest cheeseball and crackers for my lunch today. I certainly ate well.
Hubby wanted Sloppy Joe’s for supper and since there just about can’t be anything any simpler to make, I jumped on that!!
I’ve been wanting to make some Grilled Polenta. This is actually a dish that is so useful. I can grill it in the Summer and fry it in my electric skillet in the Winter or I can put a little extra milk in it for a smooth dish. The flavors, I think, are exceptional and can well take the place of meat if inclined. You can eat it as a savory dish and put relish with it or drizzle with hot sauce but I love to add a dollop of sour cream on top or you might try jelly with it for a sweetener. I like to just grill it and then while I’m at it grill up some eggplant, squash, zucchini or broccoli and then have some sliced tomatoes on the side. That’s all I need. Of course, Hubby needs meat and a good pork loin or steak on the grill goes nicely as well. You might want to add some garlic bread or not, your choice. All that being said, to prepare it you need to fix it the night before so it can sit in the frig overnight so I think I’m going to prepare some this evening. I know, I know, as soon as you say polenta to most people they immediately say yuk, how bland and boring-but, honest, this is really good!
