Today I'm trying out a new recipe. It's not hard nor is it a big deal. It's just a recipe I've never tried before. Have any of you ever tried Grilled Corn Salsa? This is a Michael Chiarello recipe and I've rarely tried any of his recipes that have failed to impress me. We'll see how it goes this evening and if it turns out I'll put it on the Recipes Page for you. It sure looks yummy. I think I'm going to cut the recipe in half because 10 ears of corn and 8 tomatoes sounds like way too much for Hubby and me. Anyway, I'll get back to you on that one.
-------------------------------------------
We truly enjoyed the Grilled Corn Salsa. It is a very mild salsa and you may want to put some red pepper flakes or perhaps some jalapenos chopped up in it. It's one of those salsas you could eat with a piece of grilled chicken, pork or perhaps a hamburger and that's about all you'd need. We were fairly impressed. Impressed enough that I will make it again!!
I still have tomatoes to work up but I'm just not sure yet what I'm going to do with them.
The hysterical part is, even though the tomatoes are slowing dying, I should still have another 1/2 bushel or more yet, but they won't all ripen at the same time . . . so perhaps we can actually get them eaten. I'm pretty well finished with any desire whatsoever to can any more so now I'm off and running on recipes that use tomatoes. I can't help it. I love tomatoes and who wants to waste such a delicious fruit?!!
