We've taken really good yogurt and some strawberry freezer jam, folded it together so that it looks like ribbons of red strawberries running through it and filled long stem glasses. We then went out and picked some spearmint leaves and put one in the top of each dessert for a little decoration. They are easy, gorgeous, sweet and not too terribly hard on your health. I had the idea because I've been straining the whey off the yogurt to spray the grapes and had a whole bunch of semi-solid-like yogurt left. For one part of it we made these desserts and the other part I put cheesecloth in a strainer, put dill, salt, pepper, parsley, onion/garlic powder blend into the yogurt, stirred it up and spooned it into the strainer, sort of pushed it down, covered it and put it over a bowl to catch anymore whey and let it sit for 24 hours. It made a beautiful round of cheese that tastes a lot like goat cheese. I dumped it upside down on a plate and sprinkled chopped chives on top. Everybody really enjoyed it with crackers.
We took this next picture this afternoon. I kept yelling at the girls to come see the Woody woodpecker!! My son said, "Mom, you might as well give it up. They haven't a clue who Woody Woodpecker is." Geez, I'm so embarrassed. I guess I really AM getting a . . . "little" . . . older.
