I was a "bad girl" last night. I don’t know why, but when I come home on Mondays I am always so tired and I wasn’t in the mood to cook. Not being in the mood to cook doesn’t happen very often but it does happen!! So, I brought home a Large Pan Pizza Hut Pizza and my husband and I sat in front of the television like two toads and ate all but two pieces. That’s just way too much pizza for anybody!! But ooooh, it was good!
I’m making myself pay for the pizza today though. I brought to work green beans and pearsauce for my lunch. Probably doesn’t sound good to most of you but the green beans will be hot and the pearsauce has that natural sweetness and will be all I want - and it’s good for me too.
Tonight I fixed ground venison a little differently for supper. As I’ve stated before, "not crazy about ground venison", but I’m still trying to find that perfect recipe. I fixed Venison Succotash. It sort of came from the fact that I've got some leftover potatoes in the frig and somewhat from talking to my daughter-in-law and niece about the Paleo Diet. I don't know too much about the Paleo Diet, don't get me wrong, but I do know enough to recognize that it certainly has a lot of health benefits going for it. So, given that I'm not too sure I want to go on the diet -- I do want to eat more healthy so I figure that the closer to the ground I could cook the better off I would be. By saying "closer to the ground", it's just my own way of saying, fresh foods or foods straight from the garden without a bunch of butter, cream and cheese, etc. Just plain good ole veggies, fruit along with a small amount of protein cooked and fixed as simply as possible. How about that, does that make any sense?
So I decided on Venison Succotash and it only had vegetables, venison, 2 Tbs Olive Oil, water, herbs and spices. It was actually very good but then again I was really hungry. I'll put the recipe on my Recipe Page. It was almost too good-for-you to be good!! TeeHee!! But it was delicious and there wasn't even any butter or cream anywhere!!!!!! I cut up a fresh pineapple last night and that made an awesome cool side dish for the meal. It's not one of those meals you brag about because it sounds weird, but hey, I could actually eat ground venison and enjoy it. That's saying something. Now I have 2 recipes for ground venison.
I’m putting on some beans tonight to soak because tomorrow I’m making bean soup. I think I’m going to put an assortment of beans in and not just Navy Beans. Maybe some pinto, kidney, black-eyed peas and navy beans. That would be a pretty good combination. Maybe I’ll go down in the freezer and get some butter beans to add to the mix. I’ll soak them overnight and tomorrow morning they’ll be ready to go. Sounds like a plan.
