Yesterday I was back to putting jugs filled with ice in my chickens' pen. They were really feeling the heat and humidity. I went out this morning and picked some cucumbers and my last cantaloupe and put the cucumbers in the frig to get them cold, along with the peel from the cantaloupe. That should be really refreshing treat for the chickens.
I also picked eggplant, breaded and froze them for Eggplant Parmesan. That is one of my favorite meals and I can't wait to fix it this Winter. Yes, I could fix it today if I wished but there are some dishes that I really, really want to spend time on and, right now, garden time is fast fleeting. Now is the time to put fruits and veggies up and get things in shape and then this Fall and Winter I'll have plenty of time to get all my "Wanna-Be-Chef" desires fulfilled!
We're having crock pot sirloin steak for dinner tonight. We have a wedding to attend this afternoon and this will keep me from having to stay in the kitchen all evening after we get home. I'll saute some peppers and onions on the side, add some buttered potatoes, slice some tomatoes and call it a day!
There's really not a whole lot left in our garden. We have some pumpkins, butternut squash, chard, peppers, eggplant and a few onions and butterbeans. We still have to dig sweet potatoes when they are ready. Other than that we have a few stray cucumbers so I'm feeling pretty good about the whole garden issue.
