It's morning! I was wide awake at 6:15 a.m. and ready to roar!! By 7:15 I had the last of the purple-hulled peas in pints (5 pints) and in the pressure cooker along with 2 quarts of water. Yes, water!! Duh!! Just goes to show how much I do NOT think outside the box. This is preparedness month and the melissaknorris.com site had a tip on canning water. Geez!! I'd never, ever thought of doing that but it works folks. Now when I can and have room left in the canner or the pressure cooker I will fill the space with water. I can't believe this never crossed my mind. What a novel way to have extra, clean, water on hand. If you keep it awhile and it goes flat just pour it back for forth into another jar and there you have it!! Beats the purchasing price of drinking water!! Our potatoes just didn't do well at all this year. In fact, we both almost decided not to dig them they were in such bad shape but instead we got out the tractor and dug them up that way. We got two 5-gallon buckets full of small red and white potatoes so what I'm going to do is can them. I've not got any that I would even keep for baked potatoes or big enough for peeling potatoes; but they'll make doggone tasty buttered potatoes, or go great in cheesy potato casseroles, tossed in with green beans, layered in with a beef roast and onions or garlic in the oven, or tucked in among some carrots in the crock pot with a big pork roast. The possibilities are endless. They are even good used for potato salads and can be pan fried - so, all is not lost. They will require some work on my part but worth the effort. Maybe next year will be our year for really good potatoes! Have a wonderful evening and an even better Sunday. Talk to you again on Monday!
