I was lazy last night and realized that the cucumbers and onions would have to sit for an hour before I could actually start the pickling procedure and I would have been up half the night if I started, so that's what I've been doing this morning after hubby left. It's actually turned out to be a very good recipe by the way. Not quite as dilly at the moment but I tasted it right out of the pan and as it sits it should get dillier. I changed the recipe a little too and I think that helped it a bit. I'll put it on my Recipes page for you. It's really easy!
While the chopped cucumbers and onions sat for an hour I went out to the herb garden and weeded. I didn't even look at the vegetable garden because I knew if I did I'd be picking this or that and never make it out to the herb garden and it needs attention so badly. Then I was back in the house to finish the relish.
Spent another hour or so in the herb garden but by 1:00 p.m. the garden was completely in sun and I had to quit. I really should be ashamed to have let it get in the shape it's in but life gets in the way sometimes and you do the best you can. On the way into the house I stopped by the vegetable garden and picked 4 cucumbers, 2 zucchini, 5 yellow squash and 2 of those larger cherry tomatoes AND 4 of the larger yellow cherry tomatoes. Ooooh, I can just see those beautiful colors stir-fried up in olive oil, with chopped garlic, salt and pepper, and maybe some chopped Swiss Chard or spinach thrown in just for good measure . . . yum!
I made some Lemon Sherbert this afternoon while I was washing the sheets and towels. I just love lemon sherbert and it's hard to find at the store. This is a really nice and easy recipe. I'll put the it on my Recipes page for you. I have a sorbet maker and I use it a LOT during the summer. There are so many recipes for making sorbet and I love to use my herbs in them. If you've never had blackberry/cinnamon basil sorbet you haven't lived!!
