This morning I got up and lifted all the tomatoes that were dehydrated, let them cool, then packaged them up and stashed them in the freezer. No, you do not have to freeze them but I like to put dehydrated vegetables in glass jars for storage and I plan on filling all my jars with canned veggies so instead I’m throwing the dehydrated tomatoes in a baggie and putting them in the freezer. Hubby is home today and he’ll be keeping an eye on the rest of the tomatoes. When I get home I am going to start another batch but these I’m going to dehydrate until they are really, really crisp and I will ground this batch for tomato paste. Then the next batch I will sprinkle with Italian Seasoning before dehydrating. Those will go perfectly into olive oils and whoa, they are tasty!
My plans are to plant zucchini and lettuces tonight and make the sauerkraut but if I don’t get it done tonight I’m definitely doing it tomorrow.
My mind is in such a whirr right now. There are about a zillion little things that I need to be accomplishing. I need to get some yellow mustard made tonight as well. Yes, they are not big things - just a lot of little things. I also need to make some salad dressings up. I like oil and vinegar dressing but we both like ranch, thousand island, French and honey mustard. I’ve got some thousand island left but I’m flat out of everything else. I’m not even thinking about all the herbal blends and salt substitutes that need to be made. That’s next week. If I hear hubby say one more time, "Have you made my garlic salt yet?", I think I’ll scream!! It’s not his fault - happens about this time every year. There are so many things to be done during the gardening season that I always fall behind in something. I’d also like to get some basil oil and some herb sorbets made, along with some herb vinegars. Yikes!! I’ve got to stop right here. It all just overcomes me after awhile!!!
